Chicken Primavera - Minute Rice

Cooking spray12 oz. boneless, skinless chicken breasts, cut into strips1 C. broccoli florets1 C. frozen peas, thawed1 lg. carrot, cut into julienne strips1 sm. red onion, chopped1 can 99% fat free chicken broth (14.5 oz)1/2 t. dried basil leaves1/8 t. pepper1 1/2 cups Minute Brown RIce, uncooked1/4 C. grated Parmesan cheese
Spray cooking spray in large skillet. Add chicken; cook and stir until browned. Add broccoli, peas, carrots and onions; cook and stir until vegetables are tender-crisp.
Stir in broth, basil and pepper. Bring to boil. Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in cheese. Makes 4 servings.
