1c sugar2tbsp light corn syrup (or liquid glucose)1/3c water1Tbsp flavoting
"Over medium heat, dissolve the sugar and liquid glucose or corn syrup in the water. Bring this syrup to a boil, and boil it to a temperature of 296-298F (147-148C). Add the flavoring, and boil the syrup to 300F (149C)~hard-crack stage.
Remove the pan from the heat at once. Pour the syrup immediately into an oiled jelly-roll pan or drop it by spoonfuls onto an oiled marble slab (I used Wilton Waxed Parchment paper taped onto my counter). If the mixture is poured into a pan, score it at once to form squares, and break it into pieces when it is cold. The mixture sets very quickly."
