Sweet Potato Stew

Ingredients
Sweet Potatoes or YamsCarrotsOne Small OnionSeveral Celery StalksSmall Handful ParsleyCinnamon PowderFresh Ginger RootCurry PowderCayenne PepperTamari Soy SauceCanned Coconut Milk (or Heavy Cream)Butter (or Coconut or Olive Oil)Chicken Broth (Substitute Vegetable Broth)
Directions
Roughly chop vegetable and parsley. Simmer all ingredients on low to medium heat for one hour. Check consistency of yams and carrots - give longer if needed - when you can cut them with a spoon, they're done. Spice according to your liking and you can variate the recipe by adding other vegetables, or a tsp or two of maple syrup or honey, to give a spicy-sweet taste.
