Potato Soup - Crock Pot

Ingredients
6 potatoes, peeled & cubed1 lg. onion, chopped1 lg. carrot, sliced1 lg. rib of celery, sliced4 t. chicken bouillon granules1 T. parsley flakes5 c. water1/4 t. ground white pepper1 T. salt4 T. Smart Balance Buttery Spread13-oz. can evaporated skim milk
Directions
*Combine all ingredients except evaporated milk in slow cooker.
*Cover. Cook on high 3-4 hours or low 10-12 hours.
*Stir in evaporated milk during last hour of cooking time.
*Serve with sandwiches, crackers and a beverage.
