Pho Style Broth

Ingredients
6 Chicken thighs, bone and skin removed5 Cloves of garlic, chopped1/2 Cup Soy Sauce1/2 Cup Cider Vinegar2 Large Mushrooms, sliced1 Onion, sliced2 Egg Whites1 Lime
Directions
Place chicken thighs in stock pot with 2 quarts of water. Add onion and garlic, bring to boil then reduce to a simmer for an hour.

Remove chicken from the stock pot, set aside to cool.

Add soy sauce, vinegar, mushrooms, and green onions to pot. Simmer another hour.

Shred chicken and add back to the pot while simmering.

While stirring broth slowly add egg whites in a constant stream. Simmer another 15 minutes, then squeeze the juice of one lime into broth.

Serve over cooked rice noodles.
