sweet potatoe suffle (.25 cup serving)

Ingredients
1.5 cups of cooked mashed sweet potatoes.25 cup 2% milk12 marshmellows (I used parade brand)2 Tbs Splenda4Tbs Parkay fat free butter sprayginger, nutmeg, and cinnamin to taste1 Tbs Fisher naturals pecan chips
Directions
steam potatoes till they are 'mashable' and mash. (@ .9 lbs will yeild 1.5 cups mashed)
stir in milk, splenda, Parkay Spray, nutmeg, ginger, & cinnamin.
put mixture into baking dish and top with marshmellows and pecans.
bake on 350 until marshmellows are melted and start to brown.

makes @ 10 - .25 cup servings at approximately 80 calories per serving and only .8 grams of fat per serving! Very low fat.
