Chicken & Biscuit Casserole

Ingredients
2 Chicken Breast, bone-insalt & pepper (to taste)3 cups chicken broth1 1/2 cups chopped celery1 cup chopped onion1 cup sliced carrots1/3 cup butter (5 1/3 tbsp)1/2 cup flour1/2 tsp poultry seasoning1 1/2 cups milkBiscuits:1 cup flour1/2 cup cheddar cheese, shredded1 1/2 tsp baking powder1/4 tsp salt3 Tbsp butter1/2 cup milk
Directions
Place chicken, broth, celery, onion, and carrots in Dutch oven; Cover. Bring to boil. Reduce Heat and simmer 45 minutes or until tender. Remove chicken, cut up and set aside. Reserve veg. and 1.5 cups broth. Melt butter in large saucepan. Stir in flour and poultry seasoning until smooth. Remove from heat and stir in milk and reserved broth. Bring to boil and stir 1 min. Stir in veg. and chicken. Place hot chicken mixture in casserole. Drop biscuits (see recipe for biscuits) on top. Bake at 425 degrees for 20-25 minutes or until biscuits are golden.
To make Biscuits: Combine flour, cheese, baking powder and salt. Cut in butter. Stir in milk just until moistened.
