Potato 1 large, Gobi 1 medium, sliced onion 1/2 cup, 2 tbsp canola oil, 1 tsp fenugreek leaves, 1 tbsp curry powder, Kasoori methi (dried fenugreek leaves, find in ethnic store), scallions if needed
Cook potato in the microwave. In the meantime heat oil, put in fenugreek seeds until they turn brown and give off fragrance. Add onion, saute few min then add cut cauliflower florets and cover. Let stay for few min then uncover and gently turn florets upside down. Cover again, look to see that each side turns a little golden brown. Add curry powder , and some salt. Cover again. In a few min florets will start getting soft and give off some fluid. Uncover add peeled and cubed potato and mix well. Cook few minutes then add crushed kasoori methi and chopped scallions in the end. Mix.
