Crockpot Clasic White Cargamanto Beans

Ingredients:Goya, White Cargamanto Beans, dry, 1 lb package; 13 servings (1/4 cup dry ) per packagePlantains, 1 mediumKroger Tomato Sauce No Salt Added, 1 cupGoya Sazon Seasoning 1 packetOlive Oil, 1 tbsp Salt, optional
Soak beans overnight.
Sort and wash soaked beans
Place in a crockpot and cover with water.
Set crockpot to cook on high for 4 hours or 6 to 8 hours on low
Add peeled and halved plantain and cook on high (or low) for 1 (or 2) hours.
Remove plantain and liquify in 1 cup of the broth from the crockpot.
Return liquified plantain to the crockpot and add salt to taste.
Allow beans to cook in the crockpot for the the remaining time.
Separately heat oil, tomato sauce, and sazon packet and add to beans before serving.
Serve over cooked rice
