Crock Pot Fiesta Chicken

Ingredients
3 large frozen chicken breasts1 can black beans drained1 can yellow corn drained1 can diced tomatoes1 can cream of chicken soup1 cup salsa1 Tbsp taco seasoning1 tsp cumin
Directions
Place frozen chicken breasts on bottom of slow cooker. Add black beans, corn and diced tomatoes. Mix cream of chicken, salsa, taco seasoning and cumin and dump over the top. Mix it up a bit with the beans and corn. Cook on high for 4-5 hours until chicken shreds easily. You can also cook on low for 8-9 hrs. Shred chicken and mix everything together.

Makes 6 one cup servings.

I serve it over brown rice (not included in calorie count).
Top with hot sauce, sour cream and shredded cheese (opt).
