Filling Tortilla Soup

1 raw onion (I use yellow)3 garlic cloves ( I always use 4, love garlic)1/2 seeded chipotle chile use (I use the canned ones that are in adobo sauce) It is not too spicy but gives it great flavor!1 medium tomato1 tbsp olive oilfour corn tortillas cut into thin stripsvegetable oil for tortillas strips (if you are frying them)vegetable or chicken broth or water works as wellSalt to taste Toppings:chopped cilantroavocado slicestortilla stripslimes2 cooked chicken breast pieces cut in chunks(optional)canned corn (optional)
Cut tortillas into strips and bake or fry until crisp. Set aside on napkin if you fried them. This will allow th oil to drain a bit. Blend onion, garlic,chile and tomato in a blender. In a deep pot, put the olive oil and saute mixture for about 5-10 minutes. Add desired water or broth and boil. Add canned corn and chicken (if you are using them) after boiling then let simmer for 10 minutes stirring occasionally.
Serve in bowls top with one or two avocado slices, cilantro and tortillas strips. Put lime on the side so it can be added by individuals according to their taste.
Servings: Makes about 4-6 bowls. Enjoy!
