Ingredients
1 med. potato2 Tbsp low fat sour cream1 Tbsp butter Note: You can use fat free ranch salad dressing.
Directions
Wash potato and poke it with a fork on both sides 2x.
Place in Microwave for 4 minutes, or whatever your microwave states for a baked potato.
Remove from microwave place in bowl, and cut it up place butter and sour cream on. Enjoy

    this is a great recipe served either hot or cold and i add egg mayo to it which surprisingly if you use duck eggs and low fat mayo it is not that unhealth - 1/17/09

    a little high in fat and cholesterol, subsituting the butter for something like smart balance light, or getting rid of the butter and usinf fat free sour cream only may help that. - 2/29/08

    This is our families FAVOURITE summer meal. The only thing we do differently is add coleslaw to it and beetroot, then it is a complete meal. GREAT to eat, quick and easy. - 1/5/08
