Lemon Curd

2 Lemons6 oz sugar4 oz unsalted butter4 eggs
1.Beat egg and add sugar.
2. Juice lemons and add to egg and sugar mixture.
3.Put in glass bowl over pan of simmering water (bain marie) and add butter in small chunks. 4.Heat over water for 20 minutes, stirring occasionally until thickened.
5.Cool slightly and pour into canning jars.
Makes 2- 8 oz jars. Refrigerate when cooled. Lasts for a couple of weeks in fridge. Spread on
toast or use as filling in a sponge cake. Delicious!!
