Low Fat Bran Muffins

Ingredients
1 cup flour1 1/2 tsp. Baking Powder1/2 tsp. baking soda1/2 tsp. ground cinnamon2 cups Post 100% Bran Cereal1-1/4 cup 2% reduced fat mild1/3 cup firmly packed brown sugar1 egg1/2 cup applesauce
Directions
Heat oven to 400 degrees. Spray muffin tin with no stick cooking spray.

Mix flour, baking powder, baking soda and cinnamon in a large bowl.

Mix cereal, milk and sugar in another bowl; let sit 5 mins.

Beat egg in small bowl; stir in applesauce.

Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

Spoon batter into prepared muffin pan, filling each cup 2/3 full.

Bake 18 - 20 minutes or until golden brown. Serve warm.

    This is so yummy and I love Bran muffins. I love the fact that they are low fat - 2/26/11
