Kristie's Inside-Out Baked Potato Salad

Ingredients
2 medium potatoes, baked and diced3 tbsp scallions, chopped2 tbsp Hormel bacon bits1 tbsp Lipton Onion Soup Mix1 cup nonfat plain yogurt
Directions
May be served hot or cold.

To serve cold: Bake potatoes using your preferred method. Allow to cool, then dice potatoes into half inch cubes. Chop scallion. Combine all ingredients in a medium bowl. Refridgerate for one hour. Serve.

To serve hot: Bake potatoes. Dice immediately into half inch cubes. For stove top cooking, combine all ingredients in a saucepan and heat thoroughly, stirring frequently. For microwave cooking, combine all ingredients in microwave safe bowl and cook for 1 minute on high. Stir and serve immediately.
