Salmon gratin

Ingredients
1 can Salmon, wild (14.75 oz), drainedreserved liquid from salmon3 Tbs butter1 cup mushrooms, slice1/4 cup onions, minced1 clove garlic, minced3 Tbs flour1 cup 2% milk1/2 cup white wine1/2 cup swiss or gouda cheese, grated1/2 tsp thyme (1/4 tsp if using dried)pepper
Directions
Melt 3 T butter. Add sliced mushrooms, garlic and onions. Saute until mushrooms are tender. Add thyme. Set aside. Add flour to butter and wisk until slightly golden. Wisk in the milk and liquid from salmon. Cook until thickened. Add wine and cook for 3 minutes. Break salmon up slightly leaving it in small chunks Stir into sauce, adding mushroom mixture. Spread in a 9x9 glass pan or the equivalent. Top with the grated cheese and bake at 375 for 30 minutes. Makes 4 servings.
