Quick and Easy Mexican Chili

* Turkey, Ground turkey, 93% lean, 1/2 lb. * Beef stock, home-prepared, 2 cup * Onions, raw, 3 small * Jalapeno Peppers, 2 pepper * Garlic, 2 cloves * Yellow Sweet Corn, Frozen, 2 cup kernels * Del Monte Diced Tomatoes, No Salt Added, 1 can * Beans, Kidney beans dark red 1 can * Chili powder, 1.5 tbsp * Cheddar Cheese, 1/4 cup, shredded
First thing first collect up your ingredients. Ok now that you have all your ingredients in front of you lets begin.
1) slice up jalapenos and dice up onions.
2) Heat a Large saucepan over medium heat. Brown turkey with onion and jalapenos. (reserve from fresh jalapeno slices and red onion for garnish if you like I didn't)
3) while browning turkey go ahead and start chopping up the garlic cloves. and make sure beans or drained.
4) Once meat is Brown and cooked add all remaining ingredients except the reserve onion and jalapeno's and cheese.
5) lower the heat and simmer for 30 minutes. Season to taste with pepper and salt ( I added black pepper, Cayenne pepper, and a touch of salt)
6) Ladle the chili into serving bowles and sprinkle each bowel with 1 tablespoon of cheese.
7) if you reserved some jalapeno pepper and onions garnish the bowels now. Serve and enjoy.
P.S. I served tortillas on the side. It worked just as well as crackers would and while added the Mexican food feeling even more. This meal is spicy and if you would like to make it less spicy you need to remove the jalapeno seeds when slicing. which is not the easy but can be done.
