Lemon-Poppy Seed Sugar Cookies

Ingredients
5 cups unbleached all purpose flour28 tablespoons unsalted butter3 eggs2 egg whites2 cups sugar in the raw1 cup stevia in the raw3 tablespoons lemon zest2 tablespoons poppy seeds1 teaspoon baking powder1/2 teaspoon saltgranulated sugar to roll dough in
Directions
Blend butter, sugar, and stevia until creamy. Mix in eggs and lemon zest.

In separate bowl whisk flour, baking powder, salt, and poppy seeds.

Slowly add flour mixture to butter/sugar mixture until just blended. Use a spatula to finish.

Scoop 1 tablespoon amounts, shape into balls, roll in sugar. Place on parchment lined baking sheet. Butter the bottom of a glass, dip in sugar, and then use to depress balls to approximately 3/4".

Bake at 350 for 10-12 minutes (1 pan at a time), until edges are set and slightly brown. Cool on pan for 10 minutes, then transfer to rack to cool completely, or serve warm.
