Harvest Apple Bread

Ingredients
1 1/2 cups flour1 tsp cinnamon1/2 tsp baking soda1/4 tsp baking powder1/4 tsp salt1 cup sugar (Splenda can be used!)1 cup peeled, shredded apple (1 large apple does the trick)1/4 cup oil1 egg1/3 cup milk (I used 1/2%)1/2 cup walnuts or pecans (receipe is calculated with walnuts)
Directions
Mix the first 6 ingredients together in a bowl.

Add all the other ingredients and stir unil combined.

Spoon batter into a greased loaf pan and bake at 350 degrees for 1 hour.

Cool in the pan for 10 minutes and then remove the bread. Cool the bread completely and cover in plastic wrap overnight, or enjoy it right then and there!

    I made this and used all splenda, and replaced oil with applesauce. It was a little tough, even though I didn't stir too much. It had pretty good flavor and is edible. I may add more cinnamon if I make it again. - 10/18/09
