Lentil Chili with Mustard Greens

Ingredients
1/2 red onion5 stalk celery1 1/2 tbsp canola oil1 cup cole slaw mix1 can fire roasted tomato1 can ro tel1 can kidney beans1 3/4 cup lentils1 cup mustard greens1 1/2 tbsp garlic1 1/2 tspcumin1 tsp cayenne pepper1 tsp white pepper1 tsp ground mustardlemon juice1 tsp sea salt
Directions
saute onion, celery in oil, add cole slaw mix
add all other ingredients plus 6 cups of water
bring to a boil
simmer approximately 60 minutes

when finished add salt and splash of lemon juice

makes about 5- 2 cup servings
