Louisiana Vegetable Gumbo

1 tablespoon olive oil1 large onion1 medium bell pepper diced1/2 cup chopped celery2 garlic cloves minced6 cups vegetable stock14.5 ounce diced tomatoes with juices1 1/2 cups okra1 small zucchini sliced1 teaspoons thyme1 teaspoon file powder 3/4 teaspoon salt1/8 teaspoon black pepperTabasco sauce2-3 cups long grain rice
1. Heat the oil in a large saucepan over medium heat. Add onion, bell pepper, celery, and garlic, cover, and cook, stirring a few times, until softened, about 5 minutes. Add stock, tomatoes, okra,zucchini, thyme, fili powder, salt, pepper, and Tabasco to taste. Simmer, partially covered, over low heat, stirring occasionally, for 30-40 minutes. Taste to adjust the seasonings.
2. To serve, spoon about half a cup of the cooked rice into each bowl and ladle the hot gumbo over the top.
