Christie's Pimento Cheese

Ingredients
6 oz. light cream cheese (room temperature)2 cups shredded pepper jack cheese2 cups shredded sharp cheddar cheese1 cup light mayonnaise (I use Dukes - makes a difference)3/4 tsp any seasoning salt you have on hand (Janes crazy mixed up or montreal steak seasoning works well)3 cloves of garlic minced6 tbls chopped pimentos or roasted red peppers
Directions
Mix all ingredients together using a mixer and store in refridgerator. It will keep for about a week. Serve with celery, cucumbers, crackers or we use it on mini whole wheat bagels for breakfast.
