Gluten Free Chocolate Chip Cookies

Ingredients
1 stick unsalted butter, melted, cooled3/4 cup packed brown sugar1/4 cup sugar1 large egg + 1 large yolk1 tsp. pure vanilla extract1/2 tsp. strong brewed coffee1/4 cup Rice milk1-1/4 cup + 2 Tbsp. Brown Rice Flour1/4 cup coconut flourheaping 1/4 tsp. baking soda1/4 tsp. baking powderheaping 1/4 tsp. sea salt12 oz. bag chocolate chip cookies
Directions
Preheat oven to 375F. Beat the sugars and the melted butter together. Add the egg & yolk and continue to beat well for a minute. Now stir in the coffee,flavorings and Rice milk. Combine the dry ingredients, chips and nuts (if you want to use) in a separate bowl and mix them together well. Add them to the wet ingredients and mix lightly with a spatula till you can't see flour any more.
Using a Pampered Chef Scoop (the larger 1/4 cup scoop), Drop cookie dough on your stones sprayed lightly with cooking spray, leaving a couple of inches between cookies. Bake for 10-13 minutes, or till a toothpick inserted near center returns with just a few crumbs.
