Low-Fat Version of Upside Down Pizza

1 lb. 99% fat free ground turkey1 medium onion, chopped1 large can of crushed tomatoes16 oz. (2 cups) part-skim shredded mozzarella1/2 cup parmesan cheese1 cup skim milk2 eggs1 tsp. olive oil1 cup flourspices as desired
Preheat oven to 400 degrees. Spray 9x13 pan with nonstick spray. Brown ground turkey with onion and garlic if desired. Add tomatoes and turkey pepperoni, and heat. Pour into pan. Mix milk, eggs, oil, and flour until smooth with spices and parmesan. Pour over top and bake until golden, 25-30 minutes. Makes 12 servings.

ERROR IN INGREDIENT MEASUREMENTS!!! I went to makeover this recipe with whole wheat flour and noted that the ingredient list calls for 16oz Mozz, however the calculations are based on 1oz!!! (Recipe is excellent as is, I just did it with whole wheat and what cheese I had on hand on a whim.) - 3/23/12
