Mini Cheddar Meat Loaves

Ingredients
2 egg lightly beaten1/2 cup quick-cooking oats4TBS Ketchup2TBS dried minced onion1 LB lean ground beefTopping:8 tsp ketchup8 TBS shredded cheddar cheese
Directions
In a large bowl, combine the eggs, oats, 4TBS ketchup and onion. Crumble beef over mixture and mix well. Coat 8 muffin cups with nonstick cooking spray; fill three-fourths full with meat mixture. Spread leftover ketchup over loaves. Bake at 400 for 15 minutes.
Sprinkle with cheese. Bake 5 mins longer or until a meat thermometer reads 160 degrees. Let stand for 5 minutes before removing from muffin cups. Yields 4 servings (2 meatloafs per serving)
