5 Jalapeño Peppers, fresh1/4 cup fat free cream cheese1/4 cup reduced fat cheddar cheese, shredded1/2 cup Fiber One cereal1/4 Egg Beaters, original
Cut jalapeño peppers in half lengthwise. Scoop out all the seeds and white membrane (these are what the jalapeños very hot!). Use rubber gloves or wash hands thoroughly afterwards!!!
Mix together the cream cheese and cheddar cheese. Season with salt, pepper, or garlic powder if desired.
Blend or process the cereal until it is similiar to bread crumbs.
Stuff the cheese mixture into two halves of the peppers. Press the pepper back together so that it looks whole again. Dip in egg beaters, then roll in cereal to coat. Lay on a foil lined baking sheet.
Bake at 350 for 25 to 30 minutes. 25 minutes if you like them spicy, 30 minutes for those who like them less spicy.
