George Stella's Low Carb Stuffed Meatloaf

2 lbs of ground chuck (very lean ground beef or meat loaf mix...can also use ground turkey or chicken2 large eggs.5 cup grated Parmesan cheese.25 cup finely diced red onion.25 c. diced roasted or fresh red bell pepper2 T. chopped fresh parsley2 cloves garlic, minced.5 t dried oregano.5 t dried basil1 t kosher salt.5 t freshly ground black pepper4 oz baked ham, thinly sliced or shredded8 oz mozzarella cheese, sliced or shredded1 cup Quick and Easy Ketchup, OPTIONAL (recipe in his book)9 X 5 inch loaf pan needed1. Preheat oven to 350.2. In a large bowl, mix together beef, eggs, Parmesan, onion, peppers, parsley, garlic, herbs and seasonings.3. Put a baking sheet on counter. Place the meat mixture on the baking sheet and form into a 10 X 8 inch rectangle.4. Place the ham in a layer on top of the meat followed by a layer of mozzarella cheese. 5. Beginning withe the short end, roll up the stuffed meat loaf mix like a jelly roll and seal the edges all around by pinching the meat. Place the roll in a greased loaf pan seam side down.6. If desired, spread a heavy coat of ketchup over the top of the meat loaf.7. Bake for about 1.25 hours, until a meat thermometer registers 165 degrees. Drain off the fat and let the meat loaf reast at least 10 minutes before cutting it into slices. ** feel free to substitute pepperoni or bacon in place of ham-- flavor of cheese can also be substituted or add mushrooms or spinach--make it your own!
