Sweet Potato Carrot Soup

2 cups chopped leeks2 cups Yam (sweet potato), cubed2 medium carrots, cut into chunks2 cans chicken broth, low fat1/2 cup fresh dill, chopped
makes 4 servings
Stir fry leeks in a small amount of broth, add more broth as needed, about 10 minutes until leeks start turning brown.
Pour in rest of the broth, add sweet potatoes & carrots. Bring to a boil. Cover, reduce heat and simmer until vegetables are tender.
Remove from pot in batches and puree in a blender. Return to the pot, add dill.
Simmer 5 minutes.
Serve hot.
