Jennie's Escarole with Beans

1 pkg(15oz) Wegmans FYFGA Fresh Chopped Escarole1 Can(15oz) Cannellini Bean 1 Tbs Olive Oil, Extra Virgin1 large clove Garlic, peeled, minced1/4 cup Vegetable Stock
1. Bring large pot of Salted water to boil, add ascarole, and blanch 1 min. Drain. Gently squeeze out excess liquid.
2. Place large skillet over MEDIUM heat and add olive oil and Garlic. Saute 1 min. Add escarole; cook stirring 1 min. Add broth and beans. Simmer, covered, 5 min.
Makes 4 (1 cup) servings
