Breakfast Casserole Strata

Ingredients
1 Tblsp olive oil1 cup chopped onions2 1/3 cups Morningstar Sausage crumbles (vegetarian)1 clove garlic3 cups cubed wheat bread (low calorie)1 cup 2% reduced fat cheddar cheese1 3/4 cup egg beaters1/2 tsp saltpepper to taste
Directions
saute onion in oil. Add sausage crumbles and brown. Add garlic. Set aside. Spray 9x9 pan with cooking spray. Spread bread cubes on bottom of pan. Spread sausage mixture on top of bread cubes. Scatter artichokes on top of sausage. Sprinkle cheese on top. Combine egg beaters with milk, salt and pepper. Pour over all. Refrigerate overnight or for 2 hours. Bake 350 for 1 to 1 1/2 hours until knife comes out clean.
