Basic Congee 12:1 Liquid:Rice

Ingredients
*Rice, white, long-grain, regular, raw, enriched, 1 cup *Organic Free Range Chicken Broth, 4 cups*Water, 8 cups*Chicken Thigh, 1, cooked, deboned*Chicken Drumstick, 1 cooked, deboned*Salt, 1 tsp *Ginger Root, 4.5 tsp fresh or 1.5 tsp dried (not ground)* optional sesame oil, green onions, spinach
Directions
Makes 10 1-cup servings.

Bring liquids to boil. Add washed raw rice. Simmer for 60 minutes, stirring gently every 10 minutes to prevent sticking/burning bottom.

Add ginger, salt, cooked chicken last 30 minutes. Stir every 10-15 minutes.

Optionally, may add other vegetables, seasonings, and more meat, too, before serving. I like to add a huge handful of raw spinach to the bowl before dishing the congee.

May be frozen before optional ingredients.
