Sweet Spicy Thai Chicken Filling

14 oz. Chicken Breast, ground100g. Onion, ground1/2 Tbsp. Sesame Oil1 Tbsp. Garlic, minced2 Tbsp. Soy sauce1 tsp. Chili Garlic Sauce2 Tbsp. Sweet Chili Sauce2 Tbsp. Peanut Butter1/4 C. Water155g. English Cucumber, Julienned w/o seeds
Heat a large pan over high heat. Spray with nonstick spray and sesame oil. Add chicken and onion and cook until browned. Add garlic and cook until tender.
Meanwhile, combine soy/chili garlic/sweet chili. Add to browned chicken and stir in with peanut butter. Stir in water, cover, reduce heat to simmer, and reduce slightly.
Serve with veggies and rice of your choice. (I like steamed orange bell peppers/baby bok choy and jasmine rice - not included in counts.) Top with Julienned cucumbers.
