Pineapple, fresh, 1 fruit Scallions, raw, 6 medium (4-1/8" long) Jalapeno Peppers, 1 pepper Thyme, fresh, 2 tsp Garlic, 4 cloves Allspice, 1.5 tsp *Extra Light Olive Oil, 2 tbsp *Pork, fresh, loin, center rib (chops or roasts), bone-in, separable lean and fat, raw, 4 chop, excluding refuse (yield from .
1. Cut four rings from the pineapple. You wanna set these aside for the garnish later. Cut the remaingin pineapple into cubes without the core. Add them to a food processor then combine with sliced scallions, chile, thyme, garlic and allspice then pulse until they are coarse chopped. Take 3/4 of a cup of mixture and set aside.
2. Season porkchops with salt and pepper. Then place in a large plastic bag. On top of the chops pour remaining liquid fliping to coat both sides in pinapple. I usually place the bag in a baking dish in case of seepage. Put in the fridge and marinate for 1-4 hours. I sometimes leave them overnight.
3. In a large Skillet heat 1 tablespoon of oil over medium to high heat. Place two porkchops in the pan brushing the pineapple off. Cook till brown on both sides. (repeat with remaining chops.) Reduce heat and cook reserved pineapple rounds until brown in spots. Serve with Chops and recieved marinade.
