1/4 C Smart Balance8 Chicken Thighs (skin on)3/4 C Flour1 tsp Salt1/4 tsp Pepper4 C Chicken Broth2 C Jasmine Rice1 TBS Minced Onion (dried)
Melt Smart Balance in in 9x13 pan in 400 oven. Remove. Mix flour, salt and pepper toether in a dish. Dredge thighs through mixture and place skin side down in pan. Cook 20 minutes remove thighs from pan and add broth rice and onion. Return thighs to pan skin side up. Cook another 40 minutes.
