Caribbean Jerk Tofu

Ingredients
1/4 cup vinegar ) any kind2 tbsp Orange Juice2 tbsp Lemon Juice2 tbsp Olive oil2 tbsp soy sauce1/2 tsp allspice1/2 tsp thyme1 tsp cayenne pepper1 tsp black pepper1 tsp sage1 tsp sugar1 tsp nutmeg1 tsp cinnamon1 garlic clove or 2 tsp chopped garlic
Directions
Combine the vinegar, orange juice, lemon juice, soy sauce, allspice, thyme, cayenne pepper, black pepper, sage, sugar, nutmeg, cinnamon and garlic in a large bowl. Stir well.

Drain Tofu and slice into 1 X 1X 1/2 inch peices. Sitr carefully so that the tofu peices are covered with marinade. Cover and refrigerate for a least 15 minutes or up to 2 hours.

Pre heat the broiler. Make sure the top oven rack is in the hightest position just under the broiling unit. Lift the tofu from the marinade and place them on rack in a roasting pan. Broil the tofu for 3-4 minutes per side until it begins to brown. Serve immediately.

While the tofu si broiling, boil the leftover marinade in a small pot for 2-3 minutes. Serve the heated marinade as a dipping sauce or as a sauce for rice.
