Fresh Tomato Soup

Ingredients
1.5 lbs Fresh Tomatoes, halved and seeded1 T Extra Virgin Olive Oil1 T Flour1 medium Onion, diced2 c Fat-Free Chicken Stock (or sub. broth)1/4 c Creamsalt and pepper to taste
Directions
In medium saucepan, warm olive oil, then saute onion. Once onion is tender, add flour and cook flour approx. 30 seconds. Add tomatoes and chicken stock, bring to boil. Reduce to simmer and cover, 20 minutes. Remove skin from tomatoes then puree tomatoes and onions until smooth, either with an immersion blender or in a stand one. Add vegetables back to pot if stand blender used. Stir well, then add cream in decorative swirl, either to entire pan, or in each bowl. Leave skins on if desired for added fiber and vitamins, although it will impact the soup texture. Serve with a slice of whole wheat bread.
