Quick Low-Fat Corn Bread

Ingredients
1 C. flour1 C. cornmeal3 Tbsp. sugar1.5 tsp. baking powder.5 tsp. salt1 C. nonfat milk.25 C. canola oil2 egg whites, lightly beaten
Directions
Spray 9" baking pan with non-stick cooking spray. Combine flour, cornmeal, sugar, baking powder and salt in large bowl. Whisk together milk, oil and egg whites and pour over dry ingredients. Stir until just combined; do not overmix. Spread batter in pan and bake 20-25 min. at 400 degrees.

    I left out the salt and sugar and used egg substitute. Added a little extra because of some of the dry comments above. Very good! - 10/14/10

    It was on the bland/dry side. I cooked for exactly 20 min, maybe could be less? I guess I'm used to a sweeter version though, I had to drizzle a teeny bit of honey on it. - 10/22/09

    This was super simple to make. Tasted wonderful! Not as sweet as some I've had but thats alright. Mine turned out nice and fluffy, softly beating the eggs white is important, as well as making sure your baking powder is fresh. - 5/19/08

    I really enjoyed this with chili last night. It wasn't as fluffy and moist was the corn bread I normally make but at half the calories, I thougth it was pretty tasty. - 11/27/07

    It was ok. I'd make it again for the lower caleries so I can have a whole peice for a serving. Instead of using cooking spray I used wax paper and that went well - 11/22/07
