Sirloin tips and mushrooms

1 lb. sirloin tips2 cups sliced fresh mushrooms2 tbsp. olive oil3 cloves garlic8oz. can tomato sauce3/4 C cooking sherry1 beef bouillon cube1/4 C water2 tbsp. brown sugar2 tbsp unsalted butter (optional)1 tsp thyme1 tsp bay leafsalt and pepper to taste
Cut beef into small cubes
In a large skillet over medium high heat, brown beef with olive oil and garlic
Add mushrooms, tomato sauce, cooking sherry, water, bouillon, brown sugar, bay leaf, and thyme.
Set temperature to medium and cook for 40-45 minutes until sauce cooks down and thickens.
Remove from heat and stir in butter (optional).
Serve over mashed potatoes or by itself!
