Szechuan Chicken Fried Rice

Ingredients
1 c uncooked regular long grain white rice2 c water1 TBSP oil1 lb boneless skinless chicken breast, cut into thin bite-sized strips¾ c frozen sweet peas½ c chopped carrot¼ c sliced green onions1/3 c purchased Szechuan stir-fry sauce½ c chopped peanuts (optional - not entered into nutritional information)
Directions
Cook rice in water as directed on package (This time not calculated in cooking time)
Meanwhile, heat oil in large skillet over medium-high heat until hot. Add chicken; cook and stir until browned.
Add peas and carrot; cook and stir 4 to 5 minutes or until vegetables are tender
Stir in cooked rice, onions and stir-fry sauce. Reduce heat to medium low. Cook 5 minutes or until thoroughly heated, stirring occasionally. Sprinkle with peanuts

Makes 4 servings
