4 boneless/skinless chicken thighs1 tbs extra virgin olive oil1/2 large white onion cut in slices2 tbs soy sauce1 tbs garlic powder1 tbs season salt2 tsp black powder1 tsp minced garlic1 package Birds Eye Asian Medley frozen vegetables
cut chicken thighs into bite size cubes
heat olive oil in wok or large skillet
add chicken, season salt and garlic powder, stir fry until nearly done on med high heat
add onions & 1 tbs of soy sauce, continue cooking on med high until chicken is no longer pink in middle
add frozen vegetables, minced garlic and rest of soy sauce continue cooking on med heat until vegetables are tender
serve over brown rice
makes approx. 3 1-cup servings
