Quick Ground Beef & Cheese Enchiladas

1 can medium Enchilada Sauce (I used Old ElPaso..10oz)1 1/4 pounds lean ground beef1 cup finely diced fresh onion1/2 cup red or green bell pepper1 small can diced green chiles 4 oz1 5.5 can V-8 juice low sodium5 large La Tortilla Factory Low Carb High Fiber Tortillas (80 calories each)1 can No Fat Refried Beans (I used Rosarita)1 cup 2% Kraft Mexican Four Cheese shredded cheese
Heat oven to 375 degrees.
Spray an 8 x 11 casserole dish with non-stick spray
In a skillet brown the ground beef and add the onion, peppers, and later the green chilies to cook throughly.
Stir while cooking. Drain the meat and veggie mixture.
Stir in the enchilada sauce and let gently simmer while preparing the tortillas. Spread the large tortillas with the can of refried beans and roll up. When tortillas are prepared then add some of the sauce meat mixture to bottom of sprayed casserole dish. Place the tortillas with beans ontop of the thin layer of sauce. Pour the remainder of meat and sauce over the tortillas and bake for about 45 minutes til bubbly and heated through.Just before removing from hot oven ... sprinkle 1 cup of shredded cheese over the casserole meal and let melt.
Remove and let set for about 10 minutes or less. Cut and serve with sour cream if desired.
You can make this meal as spicy as you like. Add different pepper and instead of the V-8 juice, use another can of enchilada sauce.
