Zesty Cucumber Salad

Ingredients
- 2 cups Cucumber, sliced- 1 cup uncooked Zucchini, thinly sliced- 1/3 cup Carrot or Beet, shredded- handful of Parsley, chopped- a few leaves of Basil, chopped- 2 tbs fresh Lemon juice- drizzle of Extra Virgin Olive Oil- 1 or more cloves of fresh Garlic, minced- dash of Sea Salt
Directions
Mix together. Let sit in fridge for 30 minutes. Then serve.

    Great!! Used the beets for sweetness, skipped the sea salt but used Mrs Dask so there is almost no sodium. Very good!! - 3/7/11
