Baked Chicken with vegetables

Ingredients
2 Chicken breasts, boneless and skinless1 cup sliced baby Portobella mushrooms1 Large carrot, peeled and sliced1 cup Broccoli florets1 small onion, diced1 can petite diced tomatoes in juice1/2 tsp fresh ground black pepper (optional)
Directions
Preheat Oven to 350.

Spray casserole dish with Canola Oil Spray. Place chicken breasts in dish, Add broccoli, carrots, onions,and mushrooms. Pour diced tomatoes over all. Black pepper to taste.

Bake for one hour. Makes 2 servings
