Ham & Pinto Bean Soup

Ham & ham bone (whatever's left after cooking a ham--I usually have about 2.5 cups)3 cups pinto beans6-8 cups water1 tsp thyme1 tsp garlic powder
Sort and rinse the pinto beans. Make sure you rinse them several times; there's a lot of dirt that stays on them. Put them into a pot with enough water to cover them well (at least 2 inches / 6 cm above the level of the beans). Soak overnight, or for at least 8 hours.
When the beans are done soaking, put the ham bone into a big stock pot with 6-8 cups of water (enough to submerge it completely). Bring to a rolling boil, then turn the heat down, cover, and let boil for an hour and a half or so, until the meat falls off the bone. Remove the bone and discard it, and strain the leftover meat to make sure you remove any gristle or cartilege. RESERVE ALL THE WATER; you'll want the ham flavor. Put the meat back in.
Drain the beans and add them to the water and ham. Add thyme and garlic powder. Simmer for at least half an hour, until the flavors have a chance to combine--the longer you cook, the better the flavors. Serving size: roughly 1.5 cups.
