Pork Medallions Dijon

Ingredients
2 pork tenderloins, 12 oz each5 tbsp w.w. Flour2 tbsp olive oil2 onions, chopped1garlic clove, minced1/4 c Dijon mustard1 1/4 c skim milk1/2 c white wine1 tbsp fresh tarragon
Directions
Slice pork into 3/4" medallions. Press flatter between your palms. Dredge pork in 3 tbsp of ww flour. Heat 1tbsp of oil in large non stick frying pan. Cook pork until golden brown on both sides, 5-7 minutes. Remover to plate. In same frying pan, heat 1 tbsp oil,add onions and garlic. Cook a few minutes. Add 2 tbsp ww flour, stir to coat onion. Stir in milk, wine. Cook, stirring, until thickened. Stir in tarragon. Add pork to pan and cook until heated through, about one minute. Enjoy!
