Cauliflower, Green Bean & Tomato Gratin

1 bag (16 oz) frozen cauliflower florets2 cups cut Italian green beans2 cups cherry tomatoes, rinsed1/2 cup dried whole grain bread crumbs1/2 cup grated pecorino roman cheese1 T olive oil1 clove garlic, minced
1. Preheat oven to 400 F. Coat 13 x 9 baking dish with cooking spray.
2. Bring 1 cup water to boil in large saucepan. Add cauliflower and beans (if frozen). Cover and cook 3 minutes, then drain. Distribute cauliflower, beans, and tomatoes evenly in prepared dish.
3. Combine bread crumbs, cheese, oil, and garlic in small bowl. Stir with fork until blended. Sprinkle mixture evenly over vegetables. Bake 20 minutes, or until crumbs are golden brown.
