Southwestern Chicken & White Bean Soup

1 lb. boneless, skinless chicken breasts, cubed1 tbsp. canola oil3/4 cup chopped onion3 cloves garlic, minced1 tsp. ground cumin2 cups low-fat chicken broth1 cup chunky salsa1 can white beans, rinsed and drained1 cup corn kernals
Saute chicken in canola oil until cooked through. Add onion, garlic, and cumin, and cook until onion is tender. Add broth, salsa, beans and corn. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.
