Vegetable Korma

1 tbs olive oil1/2 cup onion1/2 cup thinly sliced carrots1 tbs chopped garlic1/2 jalapeno pepper chopped finely (seeds removed)1 can diced stewing tomatoes1/2 bag frozen broccoli and cauliflower florets1.5 tbs curry powder1 tbs cumin4 tsp garam masala4 oz greek yogurt, plain
Heat oil over medium heat in a skillet. Add onions and carrot. When onion begins to wilt, add jalapeno and garlic. Cook until garlic begins to brown. Add stewing tomatoes with liquid and spices. Reduce heat to low and simmer for 20 minutes. Just prior to serving, stir in the yogurt until smooth.
Serve over rice (not included in calculation).
