Ingredients
Directions
2 cups Cauliflower florets cut into small pieces1 Tsp. olive oil1 TBSP Nutritional Yeastdash of Cayenne pepperdash of Sea Salt *can substitute Bragg's Amino Acids, Namu Shoya, or Soy Sauce to taste
This recipe is super easy and will take less than five min, unless you want to dehydrate it, then it will take longer.
You can do everything to taste, it’s easier than following a recipe because you can make it exactly how you like. I like to add a lot of nutritional yeast and cayenne to make it extra cheesy and spicy. You can delete the cayenne and substitute any spice you like such as cumin or garlic.
To add all the ingredients together you can put the cauliflower in a large ziplock bag and pour in the nutritional yeast and other ingredients and shake it all up. After you’ve gotten it all mixed up you can taste it and see if you need to add more of anything, and also decide if you want to dehydrate it or leave it raw. I prefer to do mine in a bowl and mix things around with a spoon because I am dehydrating mine rather than eating it out of the bag Raw.
Place the pieces out on the Teflex sheets and dehydrate at 115 degrees Fahrenheit for at least 12 hours. The cauliflower will be soft, but still have a crunchy texture. I like doing mine for a full 24 hours because then it is extra crunchy.
Make extra batches because this goes fast especially if you don't tell them it is cauliflower.

AMAZING recipe! I used coconut oil instead of olive oil, 1/4 teaspoon pink sea salt, the nooch (one tablespoon, as specified) and omitted the cayenne (mostly because I forgot to add it) and massaged it all together really well with my hands. The flavor is so amazing and cheesy, it's unreal. YUM! - 9/29/12
