Crock Pot Rump Roast

Ingredients
1 3 lb. Rump Roast3 Tbl Olive Oil15 New Potatoes15 Baby Carrots1 Med. Onion, sliced1 C Beef Broth2 tsp Garlic, minced1 Bay Leaf3 Tbl Quick Cooking TapiocaSalt & Pepper to taste
Directions
Brown meat in oil on all sides. Put potatoes, carrots and onion in the bottom of the crock pot. Sprinkle tapioca over vegetables and mix in. Put meat on top. Mix garlic with broth and pour over all. Cook on low for 10-12 hours, high for 3-5 hours.
